Today was a good day

No crazy customers or employees!

I'm excited about Jayden's birthday party tomorrow. She is having a skating and pizza party. Fun. Fun. Family is coming in from out of town. We are having a cookout at our house after for family. My mom, Terry and my dad are coming tonight and spending the night.

My sister is coming tomorrow and bringing her big bday present!!! A kitty!!! She is gonna be so excited!!

Can't wait to pick her cake up either! It's gonna be a 2 tier tangled cake. It is gonna be so pretty.

Vending machine fights!

Today was a little slower at work. Which was a good thing I guess cause we had a lot of paperwork and stuff to catch up on. No fights over where vending machines are going today. Yay! LOL Here is the story behind that:

We share an office with our reservation center and we have one side of the building and they have the other. The lobby out front is pretty much ours. It is the first thing our customers see when they walk in, so it needs to look good. The reservation center has two vending machines in our lobby that we do not want in there. The rep at the res center has pretty much caused a fight over the machines cause she refuses to get them moved. Tuesday we had the vending machines in our front lobby moved to the back of the office so we could get our carpet cleaned. The rep came over and had them moved back up front without asking any questions. So we had to get them moved back again because we had to get the carpet cleaned. What a mess?!?!?

So, DJ's truck is messing up again. He took it to the Chevy place the other day and they had to work on something. They had to take the engine out and I guess they didn't put everything back in right. He is upset about having to put it back in the shop again. He is putting it in there tomorrow morning. Hope everything goes good with it.

Jayden came home from dance with her dance ribbons from the competition last weekend. She was so excited :)

Busy off day.....can not seem to get away from busy days lol

Got up early this morning because I can never sleep late!!! Why? Wish I knew! I bought Jayden the letters S, I and X for her bday shoot I'm going to do with her. I decided to paint them this morning so they would be ready when I got a chance to do her photo shoot. She woke up and of course wanted to paint a letter so I gave her the I.

Then we were off to her dentist appointment. She did really good. We stopped and ate at Chick-fil-A aka Jayden's favorite place to eat :) I think she just likes the FREE ice cream and the indoor play room.

On to my dentist......then to the mall, where we spent WAY too much time. Lol We hunted everywhere for a white dress for graduation. NONE that I liked so we are sticking to a sun dress that she already has.

Wal-Mart. The place that has everything, but you HATE to go there. Only a few things to get. Thank goodness!

Finally home. Cooked supper. It was yummy. I posted pics and the recipe. now time to relax in the tub........and go to bed!

My wanton chicken tacos

A friend of mine once made some wanton pizzas and I though of trying out some chicken tacos. They turned out really good!! They are so easy. Here is the recipe:

1 cup cheese
Half pack wanton wraps
Packet of taco seasoning
2 tbs butter
1 package boneless chicken strips (Tyson)



Pre-heat oven to 375. Spread the wanton wraps out in a muffin pan to form bowls. Put in oven for 6 mins.



Cut chicken strips into small chunks and brown in a pan with 2 tbs butter. Add taco seasoning and follow directions on the back.

Place wanton bowls on a baking pan and fill evenly with chicken. Top with cheese. Bake on 375 for 6 mins.

BUSY week so far!!

Wow, it's only Tuesday and I am soo tired. Last night I went to be at 8. Prob won't be too long after that tonight. These 10.5 hr days are killing me lol. We have been really busy at work. The Downtown Air Center has been keeping us on our toes. I am not complaining a bit, cause they bring in more money for us. Especially these past two days with all the suv reservations. The Senior Bowl always brings in a lot of SUV customers. The Atlanta Falcons, Dallas Cowboys, Clemson and Miss State flew into the DAC this yr. I'm sure more flew in that I don't know about.

I'm have a vacation day tomorrow. Too bad it won't be a relaxing day all day :( Jayden and I both have dentist appointments ugh!

On a good note, I got to have lunch with my hubby today :) Hungry Howie's!! Their cheese bread is to die for lol DJ had to drop his truck off at the Chevy dealership to get it worked on and they gave him a loaner car. It's an HHR bahahaha!!

Homemade Mac-n-cheese

1/2 bag noodles
1/2 stick butter
1 small block of cheddar cheese, cubed
1 cup shredded cheddar cheese

Boil noodles. Drain and stir in butter. Put half noodles in a baking dish. Top with half cubed cheese then half shredded cheese. Repeat and end up with shredded cheese on top. Bake for 10-15 mins on 350.

100 Days of school

Jayden had 100 days of school today. her teacher made the students a shirt for today. They also had a project to do. They had to decorate a hat with 100 items on it. Jayden and I both being girly, we chose sparkle gems :)

Jayden Loves Dance

This yr my 5 yr old is taking baton. She loves it!! She wants to be a Crimsonette at Alabama. I am all for it! She also takes ballet, tap and jazz. She recently had a baton competition and they won two awards. They did so good.

Cowboy Casserole - From Pinterest

Another big hit at my house is the cowboy casserole. It is really easy to make as well. I changed a few of the ingredients from the original recipe.



Ingredients:

1 1/2 pounds ground beef
1 packet of Lipton onion soup mix
garlic salt
1 can (15.25oz) whole kernel corn, drained
1 can condensed cream of chicken soup
2 cups cheddar cheese, shredded
1/2 cup milk
4 tablespoons sour cream
1 bag (30 oz) frozen tater tots (I used Ore-Ida Crispy Crowns)



Before I got ready to make this casserole, I let the Crispy Crowns sit on the counter to defrost for an hour or so. The original recipe used still frozen tater tots, but I felt they wouldn't cook as well if they were still frozen solid.

In a large skillet cook the onion until tender and translucent. Add the chopped garlic and cook for 1 minute more. Add the beef and cook over medium heat until no longer pink. Drain the mixture and place into a large bowl and set aside.

In a small bowl combine the soup, milk and sour cream. Whisk until smooth. Add to hamburger mixture and stir to combine. Add corn and 1 cup of cheddar cheese. Gently mix to combine.

Grease a 9x13 inch baking dish. Layer half of the Crispy Crowns on the bottom, pour the hamburger mixture over the top and then layer with the other half of the Crispy Crowns. Sprinkle with remaining 1/2 cup cheese and bake at 350 for 25 - 30 minutes, or until golden brown and crunchy.

Bacon Wrapped Smokies - From Pinterest

These are sooooo good!! They are a hit at any party. I have made them numerous times for football parties this yr.




Ingredients

  • 1 pound Li'l Smokies
  • 12 ounces, weight Center-cut Bacon
  • FOR THE GLAZE:
  • ⅓ cups Brown Sugar
  • ¼ cups Maple Syrup (the Real Stuff)


Empty the smokies onto some paper towels and blot them dry. Dry smokies will allow the bacon to adhere better. Place the dried smokies in a single layer (keeping them separated) onto a small cookie sheet. Place in the freezer for 45 minutes.

While the smokies are in the freezer, cut the bacon into thirds. Separate each piece of bacon and place on a large cookie sheet in a single layer. Put the bacon in the fridge for at least 30 minutes. The well-chilled smokies and bacon will help to keep everything from getting too slippery when you wrap the smokies later.
When it is nearly time to take the smokies out of the freezer, preheat the oven to 350F. Line a rimmed sheet pan with heavy-duty aluminum foil. Make the glaze by whisking together the brown sugar, maple syrup, mustard, and cayenne (if using). Whisk the mixture well to ensure that the larger pieces of brown sugar have broken up.

Wrap a piece of bacon around each smokie, pressing firmly on the final edge of the bacon to better ensure it does not spring open during baking. Try not to stretch the bacon when wrapping the sausages. Place the bacon-wrapped smokies onto the foil-lined sheet pan, seam side down. Continue with the rest of the bacon and smokies. Using a spoon, put a little bit of the thick glaze on top of each bacon-wrapped smokie, trying to coat each one evenly. You should have just enough glaze to do the entire batch.

Bake the smokies for about 35 minutes or until they are lightly brown on top. Immediately transfer the smokies to a serving plate or a slow cooker set on low to keep warm

French Bread (or hoagie roll) Pizza - From Pinterest



Cut French Bread in half (I use hoagie rolls) top with Pizza sauce, cheese and then pepperonis. Bake in the over for 15-20 minutes on 400.

Quick and easy for Saturday or Sunday lunch. We love them.

Just Starting Out

So I have been fasting from Facebook which has made me think of other things to do on the net. People get so caught up with Facebook and stay on it forever. I have been planning a trip to San Antonio, TX for the 4th of July week. I looked at the prices of condos at the beach and they are $$$$$$$!! So, we decided to look for places that we have never been and decided on San Antonio. They have all sorts of things to do there. They have Six Flags, Sea World, Caverns, River Boat Taxi, The Alamo, Missions, National Park and so much more. We are also thinking about taking my little sister, Laken. She isn't very much older than my daughter, Jayden, who is about to be 6.

I have also been on Pinterest a lot lately too. LOVE that website! I have found many recipes on there and plan to share them on here with you as well. I plan on putting some of my own recipes and crafty ideas in this blog too.

Well, it's time to go to get ready for bed. I have to go in about an hour early to work tomorrow to take care of some things so more blogging later.
